Why people cook Winter White
What it can add
A white oyster for cooler rooms. Same food value as other oysters — protein, fiber, B vitamins, and beta-glucans. You grow it and cook it.
Grow it yourself
Organic hardwood, checked in Carthage. X-cut, spray, harvest the cluster.
How to use it
Twist, cook fully. Food.
As food
Oysters are lean kitchen food: protein, fiber, B vitamins, potassium, and beta-glucans in a sauté. A weekly skillet is the habit. Cook them fully. Do not eat them raw.

What you are actually growing
This strain likes 50–65°F. Warm houses make skinny, stretched caps. A cool room makes a cluster.
Basement, mudroom, or a cool kitchen counter.
How to fruit this block
Unbox the same day
Room out of hot sun. Read the name on the bag.
Cut an X on the side
2–3 inch X. Leave the rest of the bag on.
Mist the cut
Tap water, twice a day, damp not dripping.
Harvest the cluster
Twist at the base when caps flatten but rims still curve in. Cook fully.
Harvest
White, still slightly in-rolled. Cook the same day if you can.
After the last flush
Rest 7–10 days, soak 2–4 hours, fruit again.
In the kitchen
Butter, garlic, salt. Do not crowd the pan.
A first recipe
Winter White with garlic
Tear, hard sear, butter and garlic at the end. Over potatoes or noodles.
If something looks wrong
Fuzzy white, no mushrooms yet
Healthy mycelium. Keep misting.
Pins stall or turn crispy
Too dry. Mist more, or loosely tent with air holes.
Green, black, or sour mold
Photograph it. Email Team@harmonixhome.com within 30 days.
