We grow this block on organic hardwood in Carthage and check it before it ships. You keep it going for months, harvest the rust-colored tissue, dry it, and brew the tea. Pair it with a fast cooking block so you have something to eat while you wait.

How to use it

Keep the bag mostly closed. Harvest corky rust-orange pieces when they form. Dry them. Simmer 30–60 minutes. Strain. Do not eat the chunks. Do not fry.

How to fruit this block

Keep it living and clean

White to cream mycelium, 55–70°F, not green, not sour.

Do not force a cap

This is not an oyster X-cut. Opening early dries it out.

Dense, darkened, orange-brown. Dry thoroughly.

In the kitchen

Tablespoon of broken dry pieces, 3 cups water, 30–60 minutes. Amber to dark. Strain. Do not eat the chunk.

One small dried chunk, 3 cups water, 40-minute simmer. Strain. Orange peel if you like.
