Why people cook Italian oyster

What it can add

A fast cooking oyster for a warm kitchen. Protein, fiber, B vitamins, and beta-glucans in a harvest you will actually eat. Sauté the cluster. Cook it through.

Grow it yourself

Grown on organic hardwood in Carthage. You cut an X, spray, pick the cluster, and cook it.

How to use it

Twist the cluster. Cook fully. Not a tea mushroom.

As food

Oysters are lean kitchen food: protein, fiber, B vitamins, potassium, and beta-glucans in a sauté. A weekly skillet is the habit. Cook them fully. Do not eat them raw.

Food and traditional tea — not a medicine. These statements have not been evaluated by the FDA. This product is not intended to diagnose, treat, cure, or prevent any disease. If you are pregnant, nursing, or on medication, ask a clinician before making functional mushrooms a daily habit.

What you are actually growing

This is the oyster that does well when the house is 65–75°F. Same method as golden oyster.

How to fruit this block

1

Unbox the same day

Room out of hot sun. Read the name on the bag.

2

Cut an X on the side

2–3 inch X. Leave the rest of the bag on.

3

Mist the cut

Tap water, twice a day, damp not dripping.

4

Harvest the cluster

Twist at the base when caps flatten but rims still curve in. Cook fully.

Harvest

Caps 1–3 inches, still slightly in-rolled.

After the last flush

Rest 7–10 days, soak 2–4 hours, fruit again.

In the kitchen

High heat, little oil, salt at the end.

A first recipe

Italian oysters on toast

Sauté a cluster in olive oil until the edges crisp. Garlic, parsley, lemon. Toast.

If something looks wrong

Fuzzy white, no mushrooms yet

Healthy mycelium. Keep misting.

Pins stall or turn crispy

Too dry. Mist more, or loosely tent with air holes.

Green, black, or sour mold
